You don't need a Ph.D. in Philly Cheesesteaks to make a delicious sandwich that pays homage to your favorite school-set sitcom. Ready in 35 minutes, you won't have to pull an all-nighter to have a platter of pristine, primetime sandwiches ready in time for your weekly watch party.

Servings: 4 cheesesteaks
Active Time: 30 minutes
Total Time - 35 minutes

INGREDIENTS

* 1 (8-oz.) pkg Philadelphia cream cheese, softened, divided
* 1/2 cup evaporated milk
* 4 oz. sliced white American cheese, torn into small pieces
* 1 1/4 tsp. kosher salt, divided
* 4 (about 7-inches long) hoagie rolls, split
* 4 tbsp. canola oil, divided
* 1 medium-size (8 oz.) yellow onion, thinly sliced
* 2 medium-size (7 oz. each) green and red bell peppers, thinly sliced
* 12 oz. shaved ribeye steak

DIRECTIONS

1. Heat 4 ounces of Philadelphia cream cheese and evaporated milk in a small saucepan over medium. Cook, whisking often, until starting to simmer, about 2 minutes. Reduce heat to low and gradually whisk in American cheese, a handful at a time, until completely melted and smooth, about 2 minutes. Remove from heat, whisk in 1/4 teaspoon of the salt, and set aside.

2. Heat a large cast-iron skillet over medium-high. Place 2 hoagie rolls, cut-sides down, and cook until toasted, 1 to 2 minutes. Place each roll on a separate piece of foil and repeat with the remaining 2 rolls.

3. Heat 2 tablespoons of the oil in the same cast-iron skillet and heat over medium-high. Add onion, peppers, and 1/2 teaspoon of the salt and cook, stirring occasionally, until crisp-tender and starting to char in spots, about 8 minutes. Transfer to a medium bowl and set aside.

4. Add remaining 2 tablespoons of oil to the skillet and increase heat to high. Add steak in an even layer and season with remaining 1/2 teaspoon salt. Cook undisturbed, until browned on first side, about 1 minute. Stir and continue to cook, stirring occasionally, until just cooked through, about 2 more minutes. Add peppers back to the skillet and stir to combine.

5. Spread 1 ounce of the remaining Philadelphia cream cheese over the botton half of each hoagie roll; top with steak mixture. Spoon over about 1/4 cup cheese sauce. Close foil over sandwiches and let sit for 5 minutes before serving.
